Ingredients

Chicken Coating

  • 6 cups cornflakes (use gluten-free if needed)
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 large eggs, beaten
  • 2 tablespoons hot sauce
  • 2 pounds chicken breast or skinless thighs
  • Extra virgin olive oil, for drizzling

Honey Buffalo Sauce

  • 1/2 cup hot sauce
  • 6 tablespoons salted butter
  • 1-2 teaspoons seasoned salt
  • 3/4 teaspoon chipotle chili powder
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons honey

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Prepare the coating: In a food processor, pulse the cornflakes, parmesan cheese, smoked paprika, onion powder, garlic powder, and a pinch of salt until you get fine crumbs. If you don’t have a food processor, crush the cornflakes in a ziplock bag by stepping on them. Transfer the crumbs into a shallow bowl.
  3. Coat the chicken with egg mixture: Beat the eggs in a bowl, then add the hot sauce. Stir well to combine. Add the chicken pieces to this egg mixture and toss until they are thoroughly coated.
  4. Dredge chicken in crumbs: Dip each piece of coated chicken into the cornflake crumb mixture, ensuring it is fully covered. For extra crunch, dip the chicken back in the egg mixture and again in the crumbs to double coat. Arrange the coated chicken pieces on the prepared baking sheet. Drizzle olive oil over them to help crisp them up while baking.
  5. Bake the chicken: Place the baking sheet in the oven and bake for 20-25 minutes or until the chicken is golden, crisp, and cooked through.
  6. Make the honey buffalo sauce: While the chicken bakes, combine hot sauce, salted butter, seasoned salt, and cayenne pepper in a saucepan over medium heat. Stir until the butter is melted and all ingredients are combined. Remove from heat and stir in honey.
