Ingredients

Chicken

  • 4 boneless, skinless chicken breasts

Sauce

  • 1/2 cup heavy cream
  • 1/2 cup chicken broth

Garnish

  • Fresh parsley, chopped
  • Fresh chives, chopped

Instructions

  1. Season the chicken: Season both sides of the chicken breasts generously with salt and pepper to enhance the natural flavors.
  2. Sear the chicken: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Place the chicken breasts in the skillet and cook for 6 to 7 minutes on each side, until they are golden brown and cooked through. Once done, remove the chicken from the skillet and set aside.
  3. Make the sauce: Using the same skillet, pour in 1/2 cup of chicken broth and bring it to a gentle simmer. Scrape the browned bits from the bottom of the pan to incorporate their flavor into the sauce. Stir in 1 cup of Boursin cheese and 1/2 cup of heavy cream, mixing well until the sauce becomes smooth and creamy.
  4. Combine chicken and sauce: Return the cooked chicken breasts to the skillet, spooning the creamy Boursin sauce over the top. Let the chicken simmer in the sauce for a couple of minutes to heat through and absorb the flavors.
  5. Garnish and serve: Remove the skillet from heat. Serve the chicken breasts topped with chopped fresh parsley and chives for a fresh, herbal note.
