Ingredients

Noodles

  • 5.2 oz dry noodles of choice (about 2 servings), knife cut noodles recommended

Cilantro Lime Sauce

  • 1/2 small shallot or red onion, finely chopped
  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional for extra spice)
  • 1/4 cup olive oil

Seasonings

  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce, to taste
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice (juice from 1 lime)

Instructions

  1. Prepare the noodles: Cook your noodles until they are slightly undercooked and still very chewy. Drain and immediately rinse under cold water to stop the cooking process. Set the noodles aside.
  2. Make the cilantro mixture: In a large heatproof bowl, combine the chopped cilantro, minced garlic, finely chopped shallot or red onion, curry powder, sugar, and chili powder if using. Mix to combine.
  3. Heat the oil: In the pot used to cook the noodles (clean and dry), heat the olive oil over medium to medium-high heat for 3 to 4 minutes. The oil is ready when you see small bubbles forming or if a small piece of garlic sizzles immediately upon contact.
  4. Infuse the herbs: Turn off the heat and immediately pour the hot oil over the cilantro and spice mixture in the bowl. Listen for the sizzle and stir well to combine, releasing the flavors.
  5. Add seasonings: Stir in the vegetarian mushroom oyster sauce, dark soy sauce, and lime juice. Mix thoroughly to blend the flavors.
  6. Toss the noodles: Add the cooked, cooled noodles to the sauce mixture. Toss well to coat the noodles evenly with the flavorful sauce.
