A rich and comforting Creamy Asparagus Bacon Gnocchi dish that combines crispy bacon, tender asparagus, and pillowy gnocchi tossed in a luscious Parmesan cream sauce. Perfect for a savory weeknight dinner or an indulgent weekend treat.

Ingredients

Gnocchi

  • 1 lb gnocchi (store-bought or homemade)

Bacon and Vegetables

  • 6 slices bacon, chopped
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 2 cloves garlic, minced

Sauce

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions, usually until they float to the surface. Drain and set aside.
  2. Prepare the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon pieces from the skillet and set on paper towels to drain, leaving the bacon drippings in the pan.
  3. Sauté the Asparagus and Garlic: Add the trimmed and chopped asparagus to the skillet with the bacon drippings. Sauté for 3-4 minutes until tender but still crisp. Add the minced garlic and cook for another minute until fragrant.
  4. Create the Cream Sauce: Pour the heavy cream into the skillet and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce becomes creamy. Season with salt and pepper to taste.
  5. Toss Gnocchi with Sauce and Bacon: Add the cooked gnocchi and crispy bacon back into the skillet. Toss everything together carefully to ensure the gnocchi is well coated with the creamy sauce.
  6. Serve: Dish out the gnocchi onto plates or bowls and garnish with freshly chopped parsley. Serve immediately while hot.

Notes

  • Use store-bought gnocchi for a quicker version or homemade for enhanced flavor and texture.
  • Trim the asparagus well and cut into uniform pieces for even cooking.
  • If you want a lighter sauce, you can substitute half-and-half for the heavy cream.
  • Parmesan cheese can be replaced with Pecorino Romano for a sharper taste.
  • Make sure not to overcook the gnocchi to maintain a tender bite.
