Ingredients

Instructions

  1. Render the bacon: In a large skillet over medium heat, add the diced bacon and cook until it becomes almost crisp and the fat has rendered out, creating a flavorful base.
  2. Cook the chorizo: Add the pork chorizo to the skillet with the bacon, breaking it up with the back of a spoon. Cook together until the chorizo is almost crispy and well browned, blending the smoky, spicy flavors.
  3. Puree the beans and chipotles: Using a blender or immersion blender, puree the cooked pinto beans along with the chipotle chiles and their adobo sauce until smooth and creamy.
  4. Combine beans with meat: Pour the pureed bean mixture into the skillet with the cooked bacon and chorizo. Stir well to combine the flavors evenly throughout the mixture.
  5. Add cheese and jalapeños: Mix in the shredded cheese and diced pickled jalapeños thoroughly. Reduce the heat to low and let the mixture simmer for about five minutes, allowing the cheese to melt and the flavors to meld.
