This Keto Beef and Cauliflower Casserole is a low-carb, comforting dish featuring seasoned ground beef layered with creamy cauliflower puree and topped with melted cheddar cheese. Perfect for a satisfying keto-friendly meal, it combines savory flavors with a smooth, cheesy texture.

Ingredients

Beef Mixture

  • 1 lb (450g) ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Cauliflower Puree

  • 2 cups cauliflower florets (fresh or frozen)
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese (divided)

Garnish

  • Fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic, cooking until they are softened and fragrant, about 3-4 minutes.
  3. Cook Beef: Add ground beef to the skillet with the onions and garlic. Cook until browned and fully cooked through, breaking it apart as it cooks. Season with Italian seasoning, salt, and pepper, stirring to combine evenly.
  4. Prepare Cauliflower Puree: Steam or boil the cauliflower florets in a separate pot until tender, approximately 8-10 minutes. Drain thoroughly, then blend the cooked cauliflower with heavy cream and half of the shredded cheddar cheese until you achieve a smooth, creamy texture.
  5. Assemble Casserole: In a baking dish, spread the cooked ground beef mixture evenly. Spoon the creamy cauliflower puree over the beef, smoothing it out. Sprinkle the remaining shredded cheddar cheese evenly on top.
  6. Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, until the cheese is melted, bubbly, and golden brown on top.
  7. Garnish and Serve: Remove the casserole from the oven and garnish with freshly chopped parsley. Serve warm for a comforting keto meal.

Notes

  • You can use frozen cauliflower florets if fresh are not available; just ensure they are fully thawed before cooking.
  • For extra flavor, consider adding a pinch of smoked paprika or red pepper flakes to the beef mixture.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • To keep this dish dairy-free, substitute heavy cream with full-fat coconut milk and use a dairy-free cheese alternative.
