This Keto Beef Chili is a hearty, flavorful low-carb recipe perfect for those following a ketogenic diet or anyone craving a rich, satisfying chili without the added sugars and carbs. Made with ground beef simmered in a blend of spices, diced tomatoes, and beef broth, this dish offers a comforting meal packed with protein and bold taste. Optional toppings like shredded cheese, sour cream, and jalapeños add a creamy and spicy finish.

Ingredients

Main Ingredients

  • 2 lbs (900g) ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (no sugar added)
  • 1 can (8 oz) tomato sauce (no sugar added)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup beef broth

Optional Toppings

  • Shredded cheese
  • Sour cream
  • Jalapeños

Instructions

  1. Brown the beef: In a large pot or Dutch oven, heat over medium heat and add the ground beef. Cook until browned, breaking it apart with a spoon. Drain excess fat if necessary to reduce greasiness.
  2. Sauté aromatics: Add the diced onion and minced garlic to the pot with the browned beef. Cook, stirring frequently, until the onion is softened and translucent, about 3-5 minutes.
  3. Add spices and tomatoes: Stir in the diced tomatoes, tomato sauce, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Mix everything well to combine the flavors.
  4. Pour in beef broth: Add 1 cup of beef broth to the pot and bring the mixture to a gentle simmer over medium heat.
  5. Simmer the chili: Reduce the heat to low and let the chili simmer uncovered for about 30 minutes. Stir occasionally to prevent sticking and to allow the flavors to meld beautifully.
  6. Serve and garnish: Once cooked, ladle the chili into bowls and top with shredded cheese, sour cream, and jalapeños as desired for extra creaminess and heat.

Notes

  • For a thicker chili, simmer uncovered longer until desired consistency is reached.
  • Adjust the amount of chili powder and jalapeños if you prefer a milder or spicier chili.
  • Make sure to use no-sugar-added tomato products to keep the recipe keto-friendly.
  • This chili can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
  • Try adding chopped bell peppers or mushrooms for extra vegetables.
