This Keto Beef Stroganoff Casserole is a rich and creamy low-carb meal combining ground beef, mushrooms, and a savory sauce topped with melted cheddar cheese. It’s a comforting casserole that’s easy to prepare and perfect for anyone following a ketogenic diet.

Ingredients

Meat & Vegetables

  • 1 lb (450g) ground beef
  • 1 medium onion, diced
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced

Liquids & Dairy

  • 1 cup beef broth
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese

Seasonings

  • 1 tablespoon Worcestershire sauce (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook Ground Beef: In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain the excess fat to avoid greasiness.
  3. Sauté Vegetables: Add the diced onion, minced garlic, and sliced mushrooms to the skillet. Cook until the vegetables are softened and fragrant, about 5-7 minutes.
  4. Add Sauce Ingredients: Stir in the beef broth, sour cream, Worcestershire sauce (if using), Italian seasoning, salt, and pepper. Mix thoroughly to combine all flavors.
  5. Assemble Casserole: Transfer the beef and sauce mixture into a baking dish. Evenly sprinkle the shredded cheddar cheese over the top of the mixture.
  6. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and golden.
  7. Serve: Remove from the oven and let it cool slightly before serving hot for a satisfying meal.

Notes

  • To keep this recipe fully keto, use full-fat sour cream and cheddar cheese.
  • Worcestershire sauce is optional but adds a nice depth of flavor; check for sugar content if strict keto.
  • You can substitute mushrooms with other low-carb vegetables like zucchini or spinach if preferred.
  • This casserole can be stored in the refrigerator for up to 3 days and reheated before serving.
  • For a thicker sauce, reduce the beef broth slightly before combining.
