This healthy, gluten-free dish combines fresh vegetables and hearty meat for a comforting yet nutritious dinner option ideal for keto dieters.

Ingredients

Vegetables

  • 2 large zucchinis, halved lengthwise
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (no sugar added)
  • Fresh basil (for garnish)

Meat and Dairy

  • 1 lb (450g) ground beef
  • 1 cup shredded mozzarella cheese

Seasonings

  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for baking the zucchini boats.
  2. Prepare the zucchini boats: Scoop out the center flesh from each halved zucchini to create space for the filling. Place the hollowed zucchini halves in a baking dish ready for stuffing.
  3. Cook the beef mixture: In a skillet over medium heat, cook the ground beef along with the diced onion and minced garlic until the beef is fully browned. Drain any excess fat from the skillet.
  4. Add tomatoes and seasonings: Stir in the diced tomatoes, Italian seasoning, salt, and pepper into the beef mixture. Continue cooking for another 5 minutes to blend the flavors.
  5. Stuff the zucchini: Spoon the beef mixture evenly into each prepared zucchini boat. Then, sprinkle shredded mozzarella cheese generously over the top of each stuffed boat.
  6. Bake the zucchini boats: Place the baking dish in the oven and bake for 25-30 minutes, or until the zucchini is tender and the cheese has melted and started to brown slightly.
  7. Garnish and serve: Remove from the oven, garnish with fresh basil leaves, and serve warm for a delicious keto-friendly meal.

Notes

  • Use a spoon to carefully scoop out the zucchini flesh, leaving enough around the edges to hold the filling.
  • For extra flavor, you can add red pepper flakes or a pinch of chili powder to the beef mixture.
  • If you prefer, swap mozzarella for cheddar or a blend of cheeses.
  • Use diced canned tomatoes with no added sugar to keep the recipe keto-friendly.
  • These boats can be prepared ahead and refrigerated before baking; just add a few extra minutes to the baking time if baking cold.
