This classic American comfort food is perfect for a cozy family dinner with rich flavors and melt-in-your-mouth texture.

Ingredients

Beef and Seasonings

  • 2 pounds beef roast (chuck or round works well)
  • 1 medium onion, sliced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt

Thickening Slurry

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

To Serve

  • 6 slices of bread (white or Texas toast style)
  • 4 cups mashed potatoes (homemade or prepared)

Instructions

  1. Prepare the Beef and Onion: Place the beef roast in the slow cooker and layer the sliced onion over the top. This will infuse the beef with flavor as it cooks.
  2. Mix the Seasonings and Broth: In a bowl, whisk together beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, dried thyme, black pepper, and salt until well combined.
  3. Cook in Slow Cooker: Pour the broth mixture over the beef and onions in the slow cooker. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and easily shredded.
  4. Make the Thickening Slurry: In a small bowl, mix cornstarch with cold water to make a smooth slurry. This will be used to thicken the cooking liquid into a gravy.
  5. Thicken the Gravy: Remove the beef from the slow cooker and set aside. Turn the slow cooker to high heat, add the cornstarch slurry to the cooking liquid, and stir well. Let it cook for about 15 minutes until the sauce thickens into a rich gravy.
  6. Assemble the Beef Manhattan: Slice or shred the cooked beef and place evenly over the slices of bread. Spoon the thickened gravy over the beef generously.
  7. Top with Mashed Potatoes: Spoon mashed potatoes over the top of the beef and gravy on each slice of bread, spreading them evenly to create a hearty, layered open-faced sandwich.
  8. Serve Warm: Serve the Slow Cooker Beef Manhattan immediately while hot for the best comfort food experience.

Notes

  • You can substitute beef broth with homemade or low sodium broth for better control of salt.
  • Mashed potatoes can be prepared from scratch or from prepared containers for convenience.
  • Worcestershire and soy sauce add depth of flavor; reduce soy sauce if you prefer less salt.
  • For a gluten-free version, use gluten-free bread and check that Worcestershire sauce is gluten-free.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
