  1. Prepare the Chicken: Melt 1 tablespoon butter in a skillet over medium heat. Season the halved chicken breasts with salt, lemon pepper seasoning, and paprika. Cook the chicken in the skillet for about 5-7 minutes per side or until fully cooked and golden brown.
  2. Sauté the Mushrooms: In the same or a separate skillet, heat 1 tablespoon vegetable oil over medium heat. Add the sliced mushrooms and cook until tender and browned, about 5 minutes.
  3. Make the Creamed Spinach: Heat 1 tablespoon vegetable oil in a pan. Add minced garlic and sauté until fragrant, about 1 minute. Add fresh spinach and cook until wilted. Pour in ⅔ cup half-and-half and stir well. Add shredded mozzarella cheese and stir continuously until the cheese melts and the mixture becomes creamy. Season with salt and pepper to taste.
