Instructions

  1. Cook the beef: In a skillet over medium heat, cook the lean ground beef, breaking it apart as it cooks. Add 1 tablespoon of soy sauce and 1 tablespoon of hoisin sauce, stirring well to combine. Continue cooking until the beef is fully browned and cooked through, about 6-8 minutes.
  2. Add vegetables: Stir in 1 cup of shredded carrots and 1/2 cup of chopped bell peppers to the beef mixture. Cook for an additional 3-4 minutes until the vegetables are tender but still crisp. Remove from heat and let it cool slightly.
  3. Prepare rice paper wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper at a time into the water for about 10-15 seconds until it becomes soft and pliable. Lay the softened wrapper flat on a clean surface.
  4. Fill and roll: Place a small handful of the beef and vegetable mixture in the lower third of the wrapper. Top with 2-3 fresh basil leaves. Fold the sides of the wrapper over the filling and then tightly roll it up from the bottom to form a cylinder. Repeat with remaining wrappers and filling.
  5. Serve: Arrange the rolls on a serving platter. Serve fresh without cooking further, accompanied by a dipping sauce such as sweet chili sauce or peanut sauce if desired.
