These Tropical Mango Popsicles offer a refreshing and healthy treat perfect for warm weather. Made with ripe mangoes, creamy coconut milk, a touch of honey or agave syrup, and a splash of lime juice, these naturally sweet and creamy popsicles are easy to prepare and perfect for cooling down any time of day.

Ingredients

Fruits & Liquids

  • 2 ripe mangoes, peeled and diced
  • 1/2 cup coconut milk
  • 1 tablespoon honey or agave syrup (optional)
  • A splash of lime juice

Instructions

  1. Blend Ingredients: In a blender, combine the diced mangoes, coconut milk, honey or agave syrup (if using), and lime juice. Blend everything until the mixture is completely smooth.
  2. Pour Mixture: Pour the blended mixture into popsicle molds, making sure to leave some space at the top to allow for expansion during freezing.
  3. Insert Sticks: Insert popsicle sticks into the molds, positioning them centrally for easy removal later.
  4. Freeze: Place the molds in the freezer and let them freeze for at least 4 to 6 hours, or until the popsicles are fully solid.
  5. Remove Popsicles: To release the popsicles from the molds, briefly run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
  6. Serve and Enjoy: Enjoy these tropical mango popsicles as a delicious and healthy summer treat.

Notes

  • For a dairy-free and vegan treat, use coconut milk and agave syrup instead of honey.
  • If mangoes are not very sweet, adjust sweetness by adding a little more honey or agave syrup to taste.
  • You can substitute lime juice with lemon juice for a slightly different citrus flavor.
  • Try adding finely chopped fresh mint or shredded coconut for added texture and flavor.
  • Make sure to leave space at the top of the molds as the mixture expands when freezing.
